– Big Y nonstick cooking spray
2 Big Y eggs
1⁄2 cup egg substitute
3 Tbsp. Big Y all-purpose flour
1⁄8 tsp. Big Y black pepper
1 1⁄2 cups Big Y fat-free half and half
2 cups Big Y shredded Swiss cheese
1⁄4 cup sweet onions, finely chopped
1⁄4 cup red bell peppers, finely chopped
1⁄4 cup tomatoes, seeded and
finely chopped
1⁄4 cup Big Y center cut bacon,
cooked and crumbled
2 Tbsp. fresh chives, chopped
Preheat oven to 350˚F.
Spray four 2-cup baking dishes with nonstick cooking spray; set aside.
In a medium bowl, using a whisk, combine eggs, egg substitute, flour and pepper; whisk until well blended. Stir in half and half. Add cheese, onions, bell peppers, tomatoes and bacon and stir until well combined. Pour mixture evenly into prepared baking dishes and bake for 45 to 50 minutes or until a knife inserted near the center comes out clean; let cool for 10 minutes. Garnish with chives before serving.
